「number」と「amount」は、どちらも「量」を表す言葉ですが、使い分けを間違えると不自然な英語になってしまいます。IELTSライティングでも頻繁に見られる誤用の一つです。

「number」と「amount」の使い分けは、非常にシンプルです。
The number of students has increased.
学生の数が増えた。
A large number of people support this policy.

続いて、「a number of」と「the number of」の使い分けを確認しましょう。また、それに伴う動詞の単数・複数の扱いも合わせて覚えておく必要があります。この違いを理解していないと、主語と動詞の一致（subject-verb agreement）の誤りを犯してしまいます。
「a number of」は「多くの〜」という意味で、複数扱いになります。焦点は「number（数）」ではなく、その後に続く名詞にあるからです。
a number of の使用例A number of students have expressed concerns.
多くの学生が懸念を表明している。

「a number of students」の焦点は「students（学生たち）」なので、動詞は複数形の「have」を使います。
「the number of」は「〜の数」という意味で、単数扱いになります。焦点は「number（数）」そのものにあるからです。

「the number of students」の焦点は「number（数）」なので、動詞は単数形の「has」を使います。
実際のエッセイでは、「a large number of」「a significant number of」などの形でよく使われます。これらも複数扱いです。

かなりの数の企業がリモートワーク方針を採用している。
「numbers of」（複数形）という表現もありますが、これは「number」自体が複数であることを強調する場合に使います。

「a large number of」とほぼ同じ意味ですが、「numbers」を使うことで「多数の集団」というニュアンスが若干強くなります。ただし、特に理由がない場合には「a large number of」の方を選択すると良いでしょう。
「amount」の場合は、「a large amount of」も「the amount of」も常に単数扱いです。不可算名詞は単数形しか持たないためです。

ここで重要なポイントがあります。実は、「amount」自体は可算名詞なのです。そのため、「large amounts of」という複数形の表現も存在し、実際によく使われています。

膨大な量のデータが毎日収集されている。
「amounts」（複数形）を使う場合、動詞も複数形になります。これは、複数の「量」が存在するというニュアンスです。
どちらも正しい表現で、実際に広く使われています。ここでも特に理由がない場合には「a large amount of」の方を選択すると良いでしょう。
「number」と「amount」を正しく使い分けるには、可算名詞と不可算名詞の区別を理解することが不可欠です。
可算名詞は、一つ、二つと数えることができる名詞です。複数形を作ることができる名詞ですね。

「the number of」や「the amount of」は文法的には正しい表現ですが、エッセイライティングではあまり使わない方が良い場合があります。その理由を説明しましょう。
「the number of」や「the amount of」は、統計データや客観的な事実を述べる際に使われることが多く、やや堅苦しく、レポート的な印象を与えます。

これらの表現は、IELTS Task 1（グラフや図表の説明）では適切ですが、Task 2（エッセイ）では、もう少し自然で説得力のある表現を使った方が効果的です。
「the number of」や「the amount of」は抽象的な表現で、具体的なイメージを読者に与えにくいという欠点があります。

この文は正しいですが、やや無機質で、説得力に欠けます。
ただし、「the number of」や「the amount of」が効果的に使える場面もあります。
2つの数量を比較する際には、「the number of」や「the amount of」を使うことで、対比を明確にできます。
効果的な使用例While the number of university graduates has increased, the number of available jobs has decreased.
大学卒業者の数は増加している一方で、利用可能な仕事の数は減少している。
この場合、「the number of」を使うことで、2つの数量の対比が明確になります。
議論に統計的な裏付けを与える際には、「the number of」や「the amount of」が適切です。

相手の主張を認める（譲歩する）際にも使えます。

number と amount はどう使い分けますか。
number は可算名詞、amount は不可算名詞と一緒に使います。The number of students has increased. や The amount of pollution has increased. のような形です。数えられる名詞かどうかで機械的に決まります。
the amount of のうしろには何が来ますか。
不可算名詞が来ます。money、pollution、information、advice、traffic、research などです。cars や people のような可算名詞を続けた The amount of cars on the road has increased. は誤りで、number に替えます。
a number of と the number of はどう違いますか。
a number of は「多くの〜」で複数扱い、the number of は「〜の数」で単数扱いです。焦点がうしろの名詞にあるか、数そのものにあるかの違いです。A number of students have expressed concerns. と The number of students has increased. のように動詞が変わります。
A number of students has ... と書いてよいですか。
a number of は複数扱いなので have を使います。A number of problems have been identified. が正しい形です。逆に The number of students have increased. も誤りで、the number of は単数扱いなので has にします。
a large amount of people という言い方はできますか。
people は可算名詞なので、a large number of people になります。これは非常によく見られる誤用です。a large number of、a significant number of のような形もすべて複数扱いで、動詞は have や believe のような複数形にします。
amounts of という複数形はありますか。
あります。amount 自体は可算名詞なので、Large amounts of money were spent on various projects. のように複数形で使えます。この場合は動詞も複数形になります。a large amount of はまとまった1つの量、large amounts of は複数の量や繰り返しを指します。特に理由がなければ a large amount of を選ぶとよいでしょう。
エッセイで the number of を使わないほうがよいのはなぜですか。
統計データや客観的な事実を述べる場面で使われることが多く、レポート的で堅い印象になるためです。The number of people using social media has increased. は正しい文ですが、やや無機質です。More and more people are using social media. のように書き替えると説得力が出ます。
the number of が効果的に使える場面はありますか。
3つあります。While the number of university graduates has increased, the number of available jobs has decreased. のように対比を明確にするとき、統計的な根拠を示すとき、It is true that the number of people working remotely has increased. However, ... のように譲歩を述べるときです。

基本ルールは単純です。可算名詞には「number」、不可算名詞には「amount」を使います。しかし、エッセイライティングでは、これらの表現はレポート的・客観的すぎる印象を与えるため、より自然で説得力のある代替表現を使うことを検討しましょう。
